STRAWBERRY SALAD WITH CANDIED CASHEWS

Hello June! I’m so excited for this month. Summer is about to kick-off and I’m in the mood for warm weather, strappy shoes, refreshing cocktails, and SALADS.  This month I’m going to feature a variety of seasonal salads that are great for a light meal on a warm summer day or evening. These salads also pair nicely with grilled fish or meat should you wish for something more substantial. Happy Eating!

INGREDIENTS
6 c spinach
1 ½ c chopped strawberries
1 c blueberries
1 c cashews
¾ c feta cheese
1 tb maple syrup
1 tb sesame seeds
Sea salt and freshly ground pepper

BALSAMIC VINAIGRETTE
3 tb balsamic vinegar
2 ts honey
1 tb chopped shallots
½ c olive oil
Sea salt and freshly ground pepper

PROCESS
-Wash and dry spinach
-Toast cashews in a small pan on medium to high heat for about 4 minutes (stir to avoid burning)
-Remove cashews and place on a plate
-Add maple syrup, sesame seeds and sea salt then toss
-Separate and let cool
-Combine the first three vinaigrette ingredients
-Add the oil to the vinaigrette in a slow steady stream, whisk constantly
-Season vinaigrette with salt and pepper
-Dress spinach with vinaigrette
-Add strawberries
-Add blueberries
-Add cashews
-Add feta
-Toss salad
-Season with salt and pepper
